Almond Lassi

    On a warn summer day, almond lassi provides a cool refreshing drink with a rich nutty taste. Stir occasionally to
    prevent the nuts from settling down at the bottom of the glass and serve chilled.

    Serves 6:
    Preparation time: 10 minutes

  • Almond, peeled and ground – 100 gm (This is available ready made in most super stores.)
  • Yoghurt – 500 ml
  • Sugar – 8 teaspoon or to taste.
  • Almond essence – few drops. (Optional)
  • Water – 500 ml
  • Ice cubes – handful.

  • Put the ground almonds, yoghurt, sugar, almond essence, water, ice cubes in a blender and blend for a minute.

  • Serve chilled.

    You can use cashew nuts, plain unsalted peanuts, pistachios or walnuts as a substitute for almonds.

    Add only ice (no water) if you want the lassi to have a thick and smooth consistency.
